It is too hot to cook so I tend to lean toward foods that do not have to cook for very long. Koreans have several kinds of cold noodle dishes. This one is so easy even kids can make it. I remember making it for myself often where there was no one around to cook for me. I simply boiled some noodles, added the soy sauce mixture that was already in the fridge and ate a giant bowl. Today, I will share a little better “grown up”version. This is an easy vegetarian dish if you want to have it on Meatless Monday or you are having a veggie friend over. In addition, you can save money by making authentic Korean dishes at home!
Before you begin, begin boiling 8 cups of water. Add salt or not your preference – I do not because the sauce is salty enough for me.
- The sauce: Mix the following ingredients in a small bowl and let it set while you do the rest.
- 2 Tbsp soy sauce
- 1 green onion sliced thin into circles
- 1 Tbsp toasted sesame seeds
- 2 tsp sugar (or whatever sweetener you use)
- 1 tsp raw garlic minced
- 1 tsp sesame oil
- 1 tsp vinegar
- Main Ingredients:
- 6 oz SoMeyon Noodles
- 1 cup fresh julienned zuchini
- 1/2 cup matchstick raw carrots
- spray oil or 1 tsp cooking oil
Toss 6 oz of Korean So Myun noodles into the boiling pot of water. In a pinch thin noodles will do whether they are rice, wheat or buckwheat. Up to you. If you HAVE to you can even use angel hair pasta. Be sure to separate the noodles with tongs – you will cook for around 5 minutes. If your pot seems to be boiling over, just add a splash of cold water.
While the noodles are cooking, toss the julienned carrots into a nonstick pan and stir fry for 2 minutes. Check the noodles and make sure they don’t clump up! After 2 minutes add the zucchini and stir fry for another 2 minutes. When the noodles are done cooking, strain in a colander and run under cold water. “Wash” the noodles until the water chills it. Fully drain the noodles – be sure to drain as much water out as you can.
Bibim – Mix! This is where the bibim comes from – put on a plastic glove, toss the noodles and sauce together gently until all noodles are evenly coated. Top with stir fried veggies and TA DA! Simple, filling, delicious meal. Some things you could garnish with if you wish are fresh julienned cucumbers, roasted dried laver flakes, kimchi, julienned fried egg, boiled egg, etc.
