My husband was eating a meat cheese and egg biscuit nearly every day and it has caught up to him. His last checkup was not great so he wants to try eating lighter. Since I don’t want to make him breakfast every morning I decided to make him some Frittata Muffins so he can microwave them and enjoy a hot protein filled breakfast.
Right now we are focusing on him eating less bread and sugar. So I made him six with turkey, green onions, sun-dried tomatoes, fresh baby greens and feta cheese. I also made 6 with authentic Polish sausage, green onions, red and yellow baby bell peppers and Parmesan cheese. While I was at it, I made six with pork breakfast sausage, green onions and colby jack cheese – those will probably be his favorite. Last but not least, I made six with Southwest Chicken breast chunks, homemade pico de gallo and a Mexican cheese blend. I did not add salt to any of them as I felt the other ingredients had enough salt in them already. I did add some Mrs. Dash.
If he hates them, I know my oldest daughter will eat them so I’m not worried about it. Other than the turkey one, I think he will enjoy the other three flavors. Two dozen organic eggs and stuff around the house and voila, instant breakfast muffins. They smell great and look pretty good too if I say so myself.
JoAnne has made those for me before and they are always delicious and appreciated. Most of the time I just buy the Jimmy Dean Frittatas from the store.
